I’m an avid biker, I’ve participated in a few races and I’m gearing up for a marathon bike race in just a couple of months. I’m constantly looking for ways to trim calories off my favorite foods. I’ve always been a fan of pizza and over the years I’ve learned a few tricks to have the best pizza without all the added fat and calories. One of my favorite recipes are tortilla pizzas. All you do is take your favorite whole wheat tortilla, top it with garlic and tomato sauce, parmesan and feta cheese, and throw it under the broiler. It’s absolutely fantastic little treat and doesn’t take long at all! My kids love to help make the mini version on mini tortillas and I set them up with their favorite toppings and let them go to town!
